This turned out soooo good! There was not enough for the two of us. Tim said "You recorded this. Right?" We have already had it again since I did the video.
This is mostly about cooking. Not really what to cook but how to cook. We eat an organic paleo diet but regardless of what you eat, there is a thought process behind cooking without a recipe that not everyone understands. If you follow the blog you will begin to see the rhythm of cooking without a recipe every night and I hope you will begin to learn you can do it too!

Paleo Turkey Chili
This is an awesome chili. It also cleans out the fridge really well. Does your family object to vegetables in the chili? Tell them it's stew. You will be met with "but it tastes like chili" to which you can say "Chili doesn't have vegetables."

Paleo Shrimp "Fried Rice" day 3
Told you we could eat off this for 3 days. Who doesn't love that!?!?!? Yes it still has some chicken in it but the shrimp will not be hindered.

Paleo Chicken "Fried Rice"
I love this recipe because it is always a crowd pleaser and we can eat on it for 3 days (most of the time). Obviously that is because there is only 2 of us but it makes a lot, and is super simple.

Roast Chickens for a Month!
I believe in getting a big bang for your buck. Your time "buck" in this case. So I roast chicken for a month at a time. There are basically three steps. First you prep the chicken. Second you cook. Last you process. You can do all the steps in 2 days. Or you can prep on day one, cook on day two, and process on day three. Then after I got through with all that I realized a lot of people don't know how or why too clarify the fat. So bonus video on how to process the fat. Enjoy!

Green Beans and Paleo Mexican Chicken Skillet
Are Green Beans Paleo or not? Well, the jury is still out on that. But my personal opinion is that if you can eat it raw then the Paleolithic man probably did too. So, as you've seen, we eat green beans a lot.

Paleo Chicken Taco Soup
I decided to makeover yesterday's soup into chicken taco soup! I cut out some of the stirring but other than that it's pretty much real time. Diner in 8 min! What's not to love?!?!

Paleo Chicken and Acorn Squash Soup
This is more of a stew than a soup. Delicious, if I do say so myself. Remember if you get too much water you can just boil it out and if you boil out too much you can just add more 😊. I love soup. So user friendly.

Paleo stuffed Acorn Squash
Acorn squash has a mild nutty taste that can handle any number of stuffings. Because it is so mild generally I choose bold flavors. You can actually stuff it for a beautiful presentation, or use it as a platform (like a rice pilaf) as I do here with the meat from yesterday!

Lemonade
Lemonade has many benefits. Nutritionist Christa Orecchio suggests starting your day every day with lemon water. "Start the day with 16 oz. of room temperature water with a juice of half a lemon (a whole lemon if you can stand the taste). 16 ounces touches every single organ and lets the body know, hey we’re awake, and metabolism can begin!"
This is how I make mine:

Paleo Chicken with Roasted Broccoli and Carrots
I love to roast vegetables. I love the hands-off process which is largely the same no matter what you are roasting. Plus, practically all vegetables can be roasted. You will not be disappointed.

Paleo / Dairy Free Hot Chocolate!
I love hot chocolate. I love this dairy free version even better! Use a coconut milk from a can that does not have guar gum for best results. I am not against guar gum I just don't like the taste.

I eat a protein shake for lunch everyday. But I don't like the powder by itself. This is how I fix mine:
Paleo ground turkey gets a makeover
Just FYI my whole family has recently gone paleo. Now they all call it something different but they are also all asking for recipes. Why? Because I have been doing paleo for years. So in the interest of making it easy and helping out I thought I would try out a few videos. This first one I learned a lot. Mostly, TURN YOUR PHONE SIDEWAYS!!!!!! Second, Don't hold your phone while adding spices. But it is a good recipe:

Resurrecting the blog
There seems to be a consensus out there that I need to have blog. Really, I think that just means I'm a know-it-all. However, seeing as how it keeps coming up, I decided I would resurrect this site and see what happens. So instead of writing in text messages and Facebook comments about things people ask me. I'm just gonna start posting and answering the questions here.
So I guess what that means is that I have no idea what this blog will be about besides the endless hours of research I have done for myself trying to figure out things on all different levels. In so doing, there will be lots of grammatical errors, plus many, many, many run-on sentences. That is what I'm known for. Feel free to help me out when you see that happening.
Here goes nothing!
