We eat an organic paleo diet but regardless of what you eat, there is a thought process behind cooking without a recipe that not everyone understands. If you follow the blog you will begin to see the rhythm of cooking without a recipe every night and I hope you will begin to learn you can do it too!Emilyhttp://www.blogger.com/profile/09843382811392096348noreply@blogger.comBlogger94125tag:blogger.com,1999:blog-15179934.post-63149889273778755462016-03-08T11:30:00.000-05:002016-03-08T11:30:17.165-05:00Paleo Chicken Spaghetti Squash
This is an awesome chili. It also cleans out the fridge really well. Does your family object to vegetables in the chili? Tell them it's stew. You will be met with "but it tastes like chili" to which you can say "Chili doesn't have vegetables."
I believe in getting a big bang for your buck. Your time "buck" in this case. So I roast chicken for a month at a time. There are basically three steps. First you prep the chicken. Second you cook. Last you process. You can do all the steps in 2 days. Or you can prep on day one, cook on day two, and process on day three. Then after I got through with all that I realized a lot of people don't know how or why too clarify the fat. So bonus video on how to process the fat. Enjoy!
Are Green Beans Paleo or not? Well, the jury is still out on that. But my personal opinion is that if you can eat it raw then the Paleolithic man probably did too. So, as you've seen, we eat green beans a lot.
Acorn squash has a mild nutty taste that can handle any number of stuffings. Because it is so mild generally I choose bold flavors. You can actually stuff it for a beautiful presentation, or use it as a platform (like a rice pilaf) as I do here with the meat from yesterday!

I have a protein shake very day for lunch. It makes it easy. The coconut milk is from a can and has been in the refrigerator. That's why it is so thick. Golden star brand is my favorite -no guar gum and a BPA free can.

Just FYI my whole family has recently gone paleo. Now they all call it something different but they are also all asking for recipes. Why? Because I have been doing paleo for years. So in the interest of making it easy and helping out I thought I would try out a few videos. This first one I learned a lot. Mostly, TURN YOUR PHONE SIDEWAYS!!!!!! Second, Don't hold your phone while adding spices. But it is a good recipe:

There seems to be a consensus out there that I need to have blog. Really, I think that just means I'm a know-it-all. However, seeing as how it keeps coming up, I decided I would resurrect this site and see what happens. So instead of writing in text messages and Facebook comments about things people ask me. I'm just gonna start posting and answering the questions here.

So I guess what that means is that I have no idea what this blog will be about besides the endless hours of research I have done for myself trying to figure out things on all different levels. In so doing, there will be lots of grammatical errors, plus many, many, many run-on sentences. That is what I'm known for. Feel free to help me out when you see that happening.

Here goes nothing!Emilyhttp://www.blogger.com/profile/09843382811392096348noreply@blogger.com1tag:blogger.com,1999:blog-15179934.post-44266539444736359652011-09-02T10:53:00.003-04:002011-12-08T14:59:22.917-05:00Texas Tall Tales

Now I didn't write this but I found it funny enough to share. It came from some family of mine that lives in Midland/Odessa TX and since my Husband grew up there I thought I would preserve a bit of our heritage. (Midland, TX, Aug. 12, 2011) The city of Midland yesterday received one of the most remarkable and devastating weather events in the history of Texas.

In a mere 37 minutes, from 5:24 PM to 6:01 PM, Midland International Airport recorded more than twice the total amount of rain than had fallen during the previous 319 days, dating back to September 26, 2010.

Police officers reported that it was like a “wall of water” had descended upon the city. The water mixed with the nearly year’s worth of oil that had collected on roadways to make rush-hour travel nearly impossible.

One driver reportedly saw a stop sign too late and tried to slam on his brakes, only to end up in Odessa.

Cattle, who for several months had taken refuge from the drought and heat in giant cracks in the ground, were swallowed up whole by the Earth as the soil suddenly absorbed all the moisture and closed in over their heads. Rescuers, trained in Alpine avalanches, were going from ranch to ranch listening for distant mooing sounds.

Meanwhile, panicked young rattlesnakes took refuge in the branches of nearby mesquite trees.

In one especially hard-hit neighborhood, volunteers were going door-to-door in rubber boots looking for people needing assistance.

Two persons have been hospitalized so far. One, a 23-year-old woman, was standing on a street corner when the rain began. The driver of a nearby car attempted to activate his windshield wipers, and pieces of dried, brittle rubber flew off and struck her in the left eye.

The other injury was to a 47-year-old man who sprained his ankle while dancing.

John Nielsen-Gammon, the Texas State Climatologist, said that the 0.36″ of rain Midland received in 37 minutes yesterday was still not sufficient to break the drought.

“It’s a very good start,” he said. “And the additional hundredth Midland received an hour later was really the icing on the cake. Just twenty-two more flooding events like this one, and Midland will be back up to normal precipitation for the year.”

Sick, sick. He didn't want donuts this morning - sick. He is sleeping while on amphetamines - sick. Poor baby. It hit hard and fast on Thursday and hasn't let up. He also has a motorcycle trip planned with his dad all next week. So tomorrow sick or not he is going to set out for San Angelo on his gold wing - sick. I just pray he gets some good sleep in the mean time. And cookies. I can do cookies.Emilyhttp://www.blogger.com/profile/09843382811392096348noreply@blogger.com0
