This is day 2 of the chicken fried rice happiness. Add a little here and there and call it good.
This is mostly about cooking. Not really what to cook but how to cook. We eat an organic paleo diet but regardless of what you eat, there is a thought process behind cooking without a recipe that not everyone understands. Paleo Chicken "Fried Rice"
I love this recipe because it is always a crowd pleaser and we can eat on it for 3 days (most of the time). Obviously that is because there is only 2 of us but it makes a lot, and is super simple.

Roast Chickens for a Month!
I believe in getting a big bang for your buck. Your time "buck" in this case. So I roast chicken for a month at a time. There are basically three steps. First you prep the chicken. Second you cook. Last you process. You can do all the steps in 2 days. Or you can prep on day one, cook on day two, and process on day three. Then after I got through with all that I realized a lot of people don't know how or why too clarify the fat. So bonus video on how to process the fat. Enjoy!

Green Beans and Paleo Mexican Chicken Skillet
Are Green Beans Paleo or not? Well, the jury is still out on that. But my personal opinion is that if you can eat it raw then the Paleolithic man probably did too. So, as you've seen, we eat green beans a lot.

Paleo Chicken Taco Soup
I decided to makeover yesterday's soup into chicken taco soup! I cut out some of the stirring but other than that it's pretty much real time. Diner in 8 min! What's not to love?!?!
